This month we are releasing our latest product the SMI Oz Iron Kookware™ Aussie Carbon Steel Griddle™ (Aussie Carbon Steel Griddle™).

Born from many years of development and field testing carried out over “Flame ‘N’ Coals™” and all other forms of heating sources the Aussie Carbon Steel Griddle™ has drawn its inspiration from our original full hot plates (griddle plates) we still manufacture for over the fire cooking outdoors.The Aussie Carbon Steel Griddle™ brings both the outdoors and indoors together. It’s forged & wrought from a single piece of pure Australian iron, 4mm thick BlueScope Xlerplate™ steel with integrated sides and handles forming a unique, original, robust, ergonomic and versatile one piece griddle plate. Not just Made In Australia by name, truly 100% Aussie made using 100% Aussie materials by an 100%  Aussie family owned company.

We have designed and engineered it from the fire up as to speak, making it suitable for a huge variety of cooking styles and cooking applications. Whether you’re a chef  in a restaurant, home cook in the kitchen or in the great outdoors out and about camping it will excel. It can be used on electric, induction, gas and halogen stovetops (spanning 2 “burners”), in electric, gas and woodfired ovens, woodfired pizza ovens, in our very own SMI Aussie Inferno Chiminea™, over and in “Flame ‘N’ Coals™” such as over ground fire or on fire pits, in BBQ’s (gas, electric, charcoal or woodfired), Kettle Style BBQ’s including our very own SMI Oz Kettle BBQ™, Weber 22-inch Kettle BBQ, Kamado Joe, Big Green Egg, Weber Q gas BBQ and many more. It’s sure to be the most versatile griddle plate ever, especially with the full range of accessories available for it.

Unlike cast iron griddle plates that are cumbersome, heavy, ergonomically lacking in design usage function and susceptible to breaking, cracking or chipping, slow to heat up and slow to cool down, the Aussie Carbon Steel Griddle™ is made for a lifetime of healthy sustainable cooking, buy it once and use it forever. It’s quick to heat up and with plenty of thermal mass to maintain high cooking temperatures when required. It’s also fast to cool down when finished with, once off the heat source. It will not chip, crack, split or break in fact it will outlive its owner and can be passed on down to the next generation of budding cooks and chefs. There are no nasty toxic chemical coatings to peel off or get into your food, only the raw low carbon steel from which it’s made that seasons more and more each time it’s used. It comes preseasoned (with organic rice bran oil) ready to cook on and will get better the more it’s used with a minimum of maintenance required. You won’t damage its surface using stainless steel utensils either as there are no added toxic synthetic coatings, seasoning continues with each use and is “self healing” as to speak. It comes with our very own SMI “Grip ‘N’ Flip™” stainless steel BBQ tool to get you started on your lifetime cooking journey using it your way.

Most griddle plates on the market have very shallow sides, throw a few rashers of bacon on them and the liquid fat overflows leading to potential flare ups and fires especially when used indoors over a stovetop. Our Aussie Carbon Steel Griddle™ has specially designed angled sides with enough depth to contain liquid fat when cooking bacon, sausages or smash burgers on it for example, yet low enough to allow easy access when using utensils required for say flipping pancakes, flipping burgers, turning crepes, frying fish and a whole lot more.

Designed with true versatility in mind when used over a stovetop it will span 2 “burners”, creating the combination of 2 heat zones if required. Have food cooking at the hotter end and warming at the cooler end for example. Meats, fish and vegetables can be fried, grilled, roasted, steamed, poached and baked. Our domed lid accessories (2 sizes) available separately create an oven like effect on your stovetop or over a fire outdoors. All stovetop heating sources such as gas, electric, induction and halogen are fully compatible with the Aussie carbon Steel Griddle™.

When it comes to in oven use, any type (except microwave) is fully compatible, the sizing in the specifications below will let you know if it fits your domestic home or commercial oven. For BBQ’s all types (gas, electric, woodfired and charcoal) are suitable, hooded or without a hood.

Measuring a compact 545mm long (handle to handle extremity for oven sizing), 285mm wide/deep (for oven sizing) overall and 57mm high (from base to handle top) it has a huge 1040 square centimeter flat cooking surface measuring 40cm (400mm) x 26cm (260mm), ample space to cook up a feast on. It weighs in at just 4.62kg too, well less than the cumbersome cast iron options. The 2 large ergonomic handles, raised, flat and curved are especially designed and engineered for ease of use, high enough to get under to lift off a stovetop or out of an oven using oven mitts or similar, or when used over fire with a sturdy pair of heat resistant leather gloves, in use the handles will be hot so always use protective heat resistant gloves or mitts. Access for lifting can be done in 2 ways, from the outside (end to end) from the curved raised flat handles or from the opposite internal angled cut out lifting handles, especially when used in our SMI Oz Kettle BBQ™ or Weber 22-inch Kettle BBQ. The handles also are integral for use in the SMI Oz Iron Kookware™ Aussie Carbon Steel Griddle™ Flame ‘N’ Coals™ “Fire Legs” (being released in September 2026, next month), a pair of unique accessory legs allowing the Aussie Carbon Steel Griddle™ to be supported directly over a ground fire in up to 4 height variations, from low down “Flame ‘N’ Coals™” to a burning campfire depending on your chosen style of cook up, so keep an eye out for them on our website when released.

Another accessory being released this month is our unique and innovative stainless steel SMI Oz Iron Kookware™ Aussie Burger Press™ (with built-in bottle opener) great for smash burgers or as a weight/press for toasted sandwiches, cooking delicate fish, meats or vegetables with. Other accessories coming for it include our stainless steel SMI Oz Iron Kookware™ Aussie Roasting Rack™ allowing you to roast vegetables underneath the roasting rack sitting it on the griddle plate (vegetables placed underneath) and roast meat on the top of the roasting rack above for a true traditional roast dinner allowing all the juices to drip down over the vegetables below, collecting them for a traditional gravy base if required. The roasting rack also doubles as resting trivet on bench tops when not in use on the griddle plate to rest the hot griddle plate on when serving to protect from heat damage and thirdly inverted the roasting rack is a vegetable grill basket that you can use to grill vegetables in over charcoal, over coals in a fire, in a kettle style BBQ or even chargrill meats or fish in also directly over fire or in a gas or wood fired BBQ too. When it comes to those great chargrill lines on steaks and vegetables we even have our “drop in” flat SMI Oz Iron Kookware™ Char-Grill Sizzle Plate™ (released also this month) made from the same 4mm thick steel as the griddle itself. Simply rest one or two of these on the flat cooking surface of the Aussie Carbon Steel Griddle™ and turn it  into a chargriller right over your stovetop. It’s also great for cooking vegetables and meats, keeping them above the fats and oils below when desired. There are 2 size domed stainless steel lids coming also, the SMI Oz Iron Kookware™ Domed Aussie Carbon Steel Griddle™ Lids (full & half size). They are perfect for melting cheese on a burger underneath them, keeping food warm after cooking, keeping food from pests and insects outdoors when finished cooking with, for steaming or poaching fish and vegetables under in combination with our stainless steel SMI Oz Iron Kookware™ Baking Tray & Cooling Rack or a traditional outdoor roast under them over  fire.

We mentioned earlier the unique use of the handles on the Aussie Carbon Steel Griddle™ combining with our SMI Oz Iron Kookware™ “Fire Legs” accessory for true independent 4 height positioning for “over the fire cooking”, well you will notice the 2 holes on the top flat surface of each handle, they allow our “dual chain and hook” accessory to connect to our SMI Oz Iron Kookware™ “Aussie Flatty Tripod SS Combo Kit™” as well as our “SMI Daddy Long Legs™  for 2 more ways of “over the fire cooking” both giving infinite height positions above a fire also. By the way our cut out logo in each handle, letters SMI (Slot Me In™) and map of Australia also allows for a simple hook type poker to push or pull the griddle plate when used in a large traditional domed brick wood fired pizza oven too.
